There are three real engineering reasons, and they're worth understanding before you compare quotes.
MacBook Air screens are standard Liquid Retina LCDs. The 14-inch and 16-inch MacBook Pro use Liquid Retina XDR, a mini-LED backlight with thousands of individually controlled LEDs sitting behind the panel. That backlight stack alone costs several times as much as a standard LCD backlight, which feeds straight into the part price.
From the M-series MacBooks onward, the display is bonded to the lid as a single unit. There's no quick way to separate the panel from the aluminium lid without a specialist heat table, which is why Apple simply replaces the entire lid assembly. The 14-inch and 16-inch Pro models use a 120Hz ProMotion adaptive refresh rate that must be calibrated to the new panel's pixel response curve after a swap. Apple ran a free repair program for affected 13-inch models, but it has now closed, and MacTech Pro still sees Flexgate units on the bench every month.
